Vieux Carre is a term for the oldest part of the French Quarter in New Orleans. This method to create the wine is an old style of wine making. Tasting notes Color: Deep yellow. Aromas: Unique on this wine with dark honey, banana chips, rooibos (red tea), coriander seed and some light florals. Taste: This is a medium bodied wine with dried apricot, dried banana on the palate. There are some toasty and honeyed notes on the palate as well. The flavors flow throughout the palate and into the finish. Fitting with the style of wine, there is some light dusty tannin that accompanying the flavors on the finish. Production notes Vinification: The viognier was destemmed into fermentation bins. After a brief cold soak, the grapes were inoculated with yeast. The fermentation took place on the skins over the course of 8 days. When the fermentation was done, the grapes were pressed and the wine was aged in barrel for 8 months.
