WINEMAKING NOTES
Our Petit Verdot is made from 100% estate grapes from Casanel Vineyards. After hand-harvesting and sorting in our vineyard, the grapes were gently transported via small lugs to the winery where they were destemmed, sorted again on a vibrating sorting table before being sent into stainless steel tank by gravity. After 4 days of cold maceration, the alcoholic fermentation was started and occurred around 75 degrees F. Pump-overs were done every day during the fermentation and, also during the warm post-maceration, that lasted about 3 weeks. This wine was then pressed and sent to barrels where the malolactic fermentation occurred rapidly. After racking from malolactic fermentation, the wine returned to barrels to be aged for 18 months entirely in French oak Bordeaux barrels (45% new and 55% in neutral French Oak). After the appropriate aging time elapsed, wine was simply racked, filtered and hand-bottled on the Estate.

TASTING & FOOD PAIRING NOTES

Deep red dark color – black and blue fruits – dark plum – floral notes – violet – sage – strong tannins – drinking temperature: 16-17 degree Celsius – open the bottle 1 to 2 hours before serving or pass the wine through a wine aerator to open it up. Goes well with red meat dishes such as beef, duck or even venison – goes best with hard cheese but can work also with blue cheese
