Recipe: Onion-Rhubarb Relish

1 cup brown sugar

1 cup cider vinegar

1 cup water

1/2 teaspoon allspice

1/2 teaspoon whole cloves

1/2 teaspoon mustard seed

1/4 teaspoon celery seed

1 stick cinnamon

1 cup chopped onion

1 1/2 cup fresh rhubarb (cut into small pieces)

1 cup raisins

Combine all ingredients in large pot. Cover and cook for 30 minutes. Stir with a wooden spoon and cook an additional 15 minutes. Seal in sterile jars while hot. Serve relish cold. Makes 1 quart.
